The restaurant

Il Trullo da Cosimo in Herford

An Italian speciality restaurant in the Radewig quarter, run by Cosimo Lodedo. The name comes from Puglia, and so does the cooking.

Freshly prepared when you order

We do not cook ahead. Every dish is made the moment you order it. Sometimes that takes a few minutes longer, and those are exactly the minutes you taste afterwards. We make our pasta in house, the pizza comes out of the oven 28 centimetres across, and the meat comes off the grill.

Alongside the printed menu we write special creations of the house on a board at the entrance every day. Seasonal ingredients decide what goes up there: porcini in autumn, king prawns, truffle, fish in a salt crust.

If you are affected by allergies or intolerances, please speak to our service staff directly. Because we work fresh, a great deal can be adjusted.

Puglia

The history of the trulli

Until the 1930s hardly anyone paid them any attention: the small buildings with tall round roofs in Puglia. Trulli were the homes of poor country people. Today they are a “monumento nazionale” and part of the UNESCO World Heritage.

For good reason. What looks merely quaint at first sight is clever architecture: tall vaults were formed from stone blocks without mortar, recalling Mycenaean treasuries. The cones served as stores for the farmers' treasure, the grain, and were covered on the outside with a ring of overlapping stone slabs against the rain. Below them people and livestock lived under one roof. When a child arrived, a new cone was built right next to the old one. The more cones, the larger the family and the wealthier the farmer.

Originally they stood in the fields. At the end of the 15th century Conte Acquaviva di Conversano had a whole town built from trulli: Alberobello. There he settled the farmers who worked his land. The Aia Piccola and Monti quarters still count more than 1,000 roof cones today.
